Protein flapjack 💪

Monday is starting to become a day off for me so I made some protein flapjack while Macie had her nap. Hubby has been wanting to skip out the sweets for a while too so I made a healthier alternative. I searched on my fave app at the moment Pinterest and found a recipe where I had almost every ingredient already in the cupboard and as I was going food shopping I could get the rest in too. This was before I chopped it up.

My list of ingredients are:


1 cup Quaker oats
1/2 cup dessicated coconut
1 scoop apple cinnamon whirl protein powder by Protein works
1 overfilled cup of dates
1/3 cup milled flaxseed
1/3 cup aldi natural mixed seeds
3 tbs honey
2 tbs lucybee coconut oil
1 tsp vanilla essence

Add all the dry ingredients to a blender amd pulse untill the dates are slightly chopped. I found that my blender didn’t work great with all the dry ingredients in it so i pulsed alot of the dates first so they were finely chopped and added small amounts of mixture till I was happy it was blended. I suppose you could use already chopped dates and skip alot of this by just mixing together in a bowl.

I then melted the coconut oil and honey in the microwave and added the vanilla essence. I slowly added the dry mixture to the wet and made sure it was mized thoroughly before transferring to a baking tray lined with greaseproof paper. I baked it in a preheated oven at 175°c (350°f) for 20 minutes.


Once the flapjack had cooled slightly I melted around 4 x squares of lindt 90% dark chocolate in the microwave in a Pyrex jug (Be careful not to burn the chocolate so just melt a little at a time.) I then poured the melted chocolate on top of my flapjack and set it in the fridge for a few hours while I went to work.

When I came home I had to try a piece!  It was a little messy and crumbly to chop up but both Kris and I enjoyed it. Maybe I will add an extra tablespoon of oil or honey next time so that it binds the flapjack together slightly more. But overall a huge success! #healthytreats
